Breakfast Cheeseburger | Erwan Heussaff

Who says you can’t have burgers for breakfast? We’ll even toss an egg on it. Not to mention it’s the perfect hangover cure.

2 english muffins
olive oil
1 small red onion, thinly sliced
150 grams ground pork
150 grams ground beef
1 tsp chili flakes
2 tsps paprika
2 tsps garlic powder
2 tsps onion powder
1 tsp black pepper
1/2 tsp salt
1 tbsp chopped sage
2 tbsp butter
4 slices of cheddar cheese

1.) Combine the meat with all the spices, sage and powders. Season with salt and pepper.
2.) Form 2.5 inch balls and flatten them out. Sear the patties in a pan on medium heat with some olive oil, 2 mins per side. Once flipped and browned on both sides, place a slice of cheddar cheese on each piece. Take off the heat when the cheese has melted.
3.) Fry the eggs in some olive oil.
4.) Melt the butter in another pan and toast the split in half muffins on both sides.
5.) Top the bread with 2 patties, 1 egg and some shaved red onions.
