Chili Bun Burger – Handle it

Ingredients
1 LB of ground beef
1 Pack of bacon
1 Package of onion rings
4 Slices of cheddar cheese
1 Can of tomato paste
1 Package of chili seasoning
1/2 Diced onion
2 Diced jalapenos
1 Egg
Salt and pepper to season

Bun
1 Tbsp of yeast
4 Cups of flour
1 Cup of warm water
1 Egg
3 Tbsp of melted butter
3 Tbsp of sugar
1 Tsp of salt
1 Egg for coating the buns
Sesame seeds

Tools
1 Chef knife
1 Cutting board
2 Frying pans
1 Large pot
2 Mixing bowls
1 Wooden/slotted spoon
1 Spatula
2 Oven trays
1 Ladle
parchment paper

Step 1
In a mixing bowl add 1 Cup of warm water, 1/2 a cup of flour and 1 Tbsp of yeast then mix lightly and let sit for 15 minutes. Once the yeast has activated mix in 1 egg, 3 Tbsp of melted butter, 3 Tbsp of sugar, 1 Tsp salt and 3 1/2 cups of flour then mix until a dough comes together cover and let sit for 30 minutes until the dough doubles in size.

Step 2
Cut the pack of bacon in half, use one half for bacon strips and the other half for bacon bits cook in a frying pans for 10 to 15 minutes until cooked.

Step 3
In a frying pan cook 1/2 Lb of ground beef once the meat is cooked de-grease and return to the pan then add 1/2 Diced onion, 2 diced jalapenos, 1 can of tomato paste, 1 package of chili seasoning and bacon bits mix well and let simmer until thick. LIne a tray with parchment paper then ladle spoonfuls of chili on to the tray forming a puck shape and place in the freezer for 20 minutes.

Step 4
Line an oven tray with parchment paper and bake onion rings in the oven for 15 minutes at 450 degrees Fahrenheit until crispy.

Step 5
In a mixing bowl add the other 1/2 of ground beef, 1 egg, salt and pepper then mix well and form 4 burger patties. Cook burgers in a frying pan for 10 minutes until meat is cooked and juices are clear.

Step 6
Knead the dough on a floured surface then cut the dough into four pieces. Roll out two pieces of dough then take frozen chili pucks and place in the center of the dough and fold edges to cover the chili, use egg wash to seal the dough in place. With the other two pieces of dough form the heel of the bun. Egg wash the top of the bun add sesame seeds and bake in the oven at 375 degrees Fahrenheit for 15 to 17 minutes.

Step 7 Build
Place one slice of cheese on the heel then add bacon strips, burger patty, slice of cheese, burger patty, onion rings and top with crown.
